So, in case you haven’t read about what I got for my birthday, one of my gifts was Eat Smart by Niomi Smart. This made me so excited because I have been wanting this book for ages. I really need to start eating better and this book is going to help me do just that!
This weekend I tried Eat Smart for the first time and I decided to make the carrot cake. It also has (according to Niomi) a ‘lemon’ cream cheese icing. I was very intrigued by this.
I’m not going to lie, it took ages to make this. It literally took almost 3 hours – but this might be because I had to shell all of the nuts before we could move on. It is a really easy recipe to follow and, despite the time it took, it doesn’t actually require a lot of effort.
I also chose to change some of the ingredients because I did not have some of them and didn’t see the need in buying. There is nothing wrong with changing recipes up though! It makes things your own.
After the carrot cake had been in the oven for about an hour (yes, an hour!) I took it out and left it to cool. It smelled absolutely incredible! I will admit, I am always nervous about trying new recipes for the first time in case the products taste dreadful – I mean what am I supposed to do with it then?!
In this instance I did not have to worry about that. The carrot cake tasted amazing! It wasn’t too dry, or too crumbly, it was the perfect texture. The taste was absolutely delicious and it has been eaten pretty quickly!
I was not a huge fan of the icing but I will give it another go! Next time I might try a different kind of icing instead though.
In short, this is definitely something that I will be making again! If you guys would like to see more of these posts with recipes from the book then let me know 🙂

I hadn’t heard of this cookbook before but after seeing your photos, I think I need to buy it! 3 hours is quite a long haul for baking but I’m sure this cake was worth it!

This looks absolutely amazing, and is making me so hungry! I never used to like carrot cake (well I thought I didn’t!) until I got one for free on holiday a few years ago. After that I was hooked!
It always freaks me out the amount of oil and carrot that goes into it though – but it always tastes divine. The cream cheese icing has to be my fav!

Carrot cake is literally my favorite. It’s so good. This lemon cream cheese frost sounds fascinating. I might have to explore this book if all the recipes are as yummy as this.
