My Week in Food: Breakfast 1

So recently I realised that I really needed to start eating healthier. My problem with food is that I get lazy and bored and I end up eating the quickest things to make. These are also not always the healthiest options. I decided to start a little series like this where I share what I ate in a week because hopefully it will give you some ideas. Also, I’m working on a working week so there will only be 5 meals.

For the start of this series I am going to be sharing my breakfast with you for the week.

Monday – Carrot Cake Porridge (ES)

I must admit that I was a bit skeptical about this. I mean carrots and oats don’t really seem like a good combination, but boy was I wrong. This was delicious and kept me full until lunch time. I woke up earlier than normal to cook this in the morning, but it was well worth it.

Tuesday – Acai Smoothie Bowl (ES)

This was delicious. I made the smoothie the night before and then the next morning poured it into a bowl with fruit. It was a lot thicker than a normal smoothie which was great because it gave it a bit more texture. I chose to have mine with bananas and strawberries but any fruit would work!

Wednesday – Swiss Bircher Muesli (ES)

I wasn’t sure if I would like this as I thought that the apple in it would become soggy after being in liquid all night but it was actually really good! It was also incredibly filling and made quite a lot! I couldn’t eat this for only one meal as it was just too much. It was really fresh and had wonderful flavours.

Thursday – Banana and Honey Porridge (DE)

This was another oats dish that I made in the morning an it was so good. It was also very comforting. A warm, banana and oats dish is a wonderful way to start the day. The honey just gave it a natural sweetness so I did not need to add any extra which made me feel a whole lot healthier!

Friday – Banana Bread Porridge (ES)

As you can tell, bananas and oats were pretty much a staple for me this week. I did, however, make different meals with them and they were all delicious. This one was no exception. I added frozen blueberries to mine and they added a really great flavour as well. This kept me full for so long so it is definitely something that I will be making again.

I am so excited to continue on this healthy eating track. It has been such fun to make different kinds of breakfast and I would definitely make all of these again. I will link the websites for both ladies as they both have loads of recipes on there that you can look at.

    I wish I could eat breakfast! I just can’t eat before 9AM, but make myself eat a cracker every morning. Your breakfast foods look so much better than my crackers though!

      I never used to be able to eat in the morning but with my work hours I had to start forcing myself!
