Blogmas Day 3: Easy, Delicious Blondie Recipe

I tried something new today so I wanted to share it because they came out so well – the taste, not necessarily the look. It’s nothing revolutionary, because they’re becoming a lot more popular, but today I made blondies! They have a caramel-y kind of flavour and the texture is brownie like without the density and hit of chocolate.

Things to know:

  • I made mine with white sugar, but traditionally they’re made with brown.
  • I also added a bit of baking powder which is not strictly necessary, but made me feel better.
  • The dish I used was approx. 22cmx22cm.

Ingredients

150g melted butter

230g sugar

2 eggs

1tsp vanilla essence

195g flour

¼ tsp baking powder

pinch of salt

Method

1. Preheat oven to 180°C

2. Line your dish with baking paper

3. Mix the butter and sugar together

4. Add the eggs and vanilla and stir until smooth.

5. Add flour, baking powder, and salt to the mixture and mix until just combined.

6. Pour the mixture into the dish and smooth it out on top.

7. Bake for 20 minutes (although this will depend on your oven). You’ll know it’s ready when you stick a knife in the mixture and it comes out clean, or with a few crumbs.

8. Let the blondies cool completely before removing them from the dish – ideally for 45 minutes.

9. Once you remove them leave them for about another 20 minutes before slicing into them. If you don’t mind less structured blondies then you can reduce the wait time after cooking. I left mine for 30 minutes before taking them out of the dish and about 30 minutes after that to cut into them. They were a little crumbly but absolutely edible!

10. Once they’re cool, slice and enjoy!
