
On the 4th day of Blogmas I made Peanut Butter Rice Krispies Squares! I would say that this recipe is probably pretty foolproof so it’s definitely worth a try! You can use any size dish but I used a 22cmx22cm dish and the squares were the perfect size and height. This recipe made 12 squares, was easy to make, and only used 6 main ingredients – the topping is optional!
Ingredients
Base
1¼ cups smooth peanut butter
4T golden syrup
2½T butter
1tsp vanilla essence
pinch of salt
3½ cups Rice Krispies
Topping (optional)
20g dark chocolate
2T peanut butter
3tsp warm milk
Method
1. Line a 22cmx22cm dish with baking paper.
2. Melt the peanut butter, syrup and butter together until smooth.
3. Remove from heat and add vanilla essence and salt.
4. Add the Rice Krispies and mix until all Rice Krispies are coated.
5. Transfer the mixture into the dish and press down firmly. Tap the dish lightly on the counter to get rid of any air bubbles.
6. Put the dish into the fridge for around 30 minutes.
7. Melt the chocolate and drizzle over the base. Put it in the microwave for 10-15 seconds at a time and stir in-between until you get to the desired thickness.
8. Drizzle onto the Rice Krispies base.
9. Add warm milk and peanut butter to a microwave friendly dish and microwave for 10-15 seconds at a time until thin enough to drizzle. I would suggest adding small amounts of milk at a time until you get the desired consistency.
10. Drizzle onto the Rice Krispies base.
11. Put back into the fridge for 45-60 minutes before cutting. Once cut, keep refrigerated. They should be fine for up to a week!
These are a quick and easy snack to make, although they do take some time to set properly. However, if you can’t wait that long you can always cut them early – they might not hold their shape as well but they’ll still be delicious!
