
People say that breakfast is the most important meal of the day but I think it’s dessert. Next Tuesday (14 October) is Dessert Day so I pondered a lot about what dessert to share with you. My sister and I had a baking day and we made these delicious Oreo Peanut Butter Cupcakes so I figured this was the perfect treat to share with you.
These Oreo Peanut Butter Cupcakes are delicious, easy to make, and use ingredients that you probably already have at home. The end result is a delicious Reese’s inspired cupcake.
Makes 12
Ingredients:
Cupcakes:
- ¾ cup (175g) butter, softened
- ¾ cup (150g) caster sugar
- 3 eggs
- ⅓ cup (40g) cocoa powder
- 1 cup (125g) self-raising flour (or 1 cup cake flour and 3t baking powder)
- 1t baking powder
- 12 Oreos (optional, for base)
Icing:
- ½ cup (100g) unsalted butter, softened
- ½ cup (100g) smooth peanut butter
- 1½ cups (200g) icing sugar
- 1T milk (as needed)
- 8 Oreos, crushed

Method:
Cupcakes:
- Preheat the oven to 180.
- Spray cooking spray inside cupcakes cases and line with an Oreo (you can skip this step if you’d prefer because the cupcakes are delicious without it).
- Mix the butter and caster sugar together until smooth, pale, and fluffy.
- Add eggs one at a time, beating after every one.
- In a separate bowl, mix the cocoa powder, self-raising flour and baking powder.
- Fold into the wet mixture – add 1T of milk if the mixture is too thick.
- Fill the cupcake cases about ¾ of the way and bake for 15-18 minutes – you’ll know they’re ready when you stick a toothpick on the centre and it comes out clean.
Icing:
- Beat the butter and peanut butter until light and fluffy.
- Slowly add icing sugar and mix until smooth.
- Mix in the crushed Oreos – add milk if you need to, but only a little at a time.
Once the cupcakes have cooled, you can ice them.
Variations:
- add crushed Oreos into the cupcake mixture
- add cream cheese into the icing
- add chocolate chips for an even more chocolatey taste

These cupcakes are delicious and have been a hit at every party I’ve ever served them at. Personally I don’t know if the Oreo on the base of the cupcake is even necessary because it doesn’t really stay crunchy (obviously) and the cupcake tastes great. Overall, a favourite of mine for a party, or an afternoon treat.
