
The month of May brings with it the month I really need to get myself together and start being healthier. I have been trying but I really need to get a better plan worked out. That is why I sat down and created a meal plan for myself. Hopefully this will make me less stressed about what to make for lunch and dinner, and will also ensure that I actually eat better meals. This simple salad is the first proper meal that I made out of my eating plan and it tasted so good that I felt I needed to share it with you.

Serves 2 (depending on portion size)
Ingredients
3 large leaves of spinach
½ cucumber
2 tomatoes
½ avocado
¼ onion
a handful of nuts
2 tbsp pumpkin seeds
salt and pepper to taste
Method:
- Chop all of the ingredients and put into a bowl – the size of the pieces will depend completely on your personal choice.
- Mix together and serve.
- Place the left over salad in a bowl in the fridge.
If you’re not a fan of spinach then you can replace the spinach with lettuce.

It’s as simple as that! Such a quick and easy recipe – perfect for taking to work as a meal or eating with something else for dinner time. I love the crunch that the nuts add to it! My favorite go-to for lunch tends to be salad, too – I like mine with chicken, hard-boiled egg, spinach, lettuce, tomato, cucumber, carrots, and cheese. Usually, my guilty pleasure it to top it with honey mustard dressing – yum!
